Almonds are thin, leathery and grey-green covering a woody seed shell which is like a smooth oblong peach seed. There are two common types of almonds
Almonds are commonly roasted or crushed and used as a paste in food. From Italian to Indian cuisine, almonds are used in desserts, or ground to make almond butter, almond milk. Baby almonds "green almonds" can been eaten whole while they are still fleshy and sour.
Although most people consider almonds to be a nut, they are actually a member of the Prunus family, along with their cousins the plum, cherry, peach and nectarine. Bitter almonds contain traces toxic oils, so use caution and avoid these. Almonds are deciduous and pollinated by bees.
