Physical Description:
Elderberries grow on large, rangy bushes with large toothy leaves. Elder bushes have abundant small five petaled flowers in pink, yellow, purple or white.
Usage:
Elderberries are delicious eaten fresh, or made into elderberry jam or marmalade. In Europe, elderflowers are made into liqueurs, marshmallows and syrups. Black elderberry extract has been shown to be an effective treatment for influenza. Black elderberry extract has been shown in double blind studies to be an effective treatment for influenza.
Factoids:
The Elder Tree was believed to ward off evil influence and protect people from witches, so people could not cut them down without releasing the vengeful Elder Mother.
