Physical Description:
Like other citrus fruits, kumquats have large, dark green leaves with smooth edges. Kumquats are small, thick skinned citrus fruits; they are ripe when the last tinge of green has left their skin.
Usage:
Kumquats are prized for their fragrant skins. In Asian cuisines, they are often salted or sugared and preserved. In European cuisine, they are macerated and made into liquor.
Factoids:
Also known as "Fortunella", Kumquats were originally named for Robert Fortune, the famed British agricultural spy of the mid-Victorian. He learned Mandarin and disguised himself as a Chinese peasant to smuggle famous Chinese tea cultivars out of China, thus breaking the Chinese monopoly on tea in the pre-Opium War era.
