apple pie

pre heat oven to 425

two dough rounds, store bought or home made

2 and 1/2 lbs green apples like granny smith or other tart apple
1 cup of sugar
dash of salt
sqeeze or two of lemon, plus zest
cinnamon, dash or 1/2 teaspoon if you like it alot
dash of allspice
splash of rum or calvados if you have it
few tablespoons of butter

line pie pan with one crust. put this in the fridge for like 30 minutes.

i peel half the apples, and leave the others with skin on, but you can peel them all if you like.
core them all, slice into about ten slices each apple. you can slice them lager or smaller if you like chunky or elegant.

add about 3/4 cup of the sugar then every thing but the butter, toss. taste. need more sugar? if it looks too soupy, add a spoon of flour too.

heap into crust lined pie pan, top with butter, here and there. drape top crust, crimp edges, i use a fork to moosh the edge together. cut a few holes for steam, sprinkle with a spoon of sugar

bake, on a sheet pan or slab of foil to catch drips, for about 25 minutes. turn oven down to 350, cook for about 30 to 40 min more. you want the insides to be bubbling and not to burn the edges. if the edges look dark, you can give it a tin foil hat!

cool for about an hour, then eat the whole thing and tell everyone on facebook you just ate a whole pie!
